COMMERCIAL ITEM DESCRIPTION
DOUGH TROUGHS
The General Services Administration has authorized the use of this Commercial Item Description in preferences to Size 4 and Size 6 of Military Specification MIL-D-13053.
Intended Use. The dough troughs covered by this CID are intended for use in bakeries and pastry kitchens for transporting dough.
Sizes:
Size 4- 4 ft. long
Size 6- 6 ft. long
Salient characteristics:
Description. The dough trough shall be fabricated of stainless steel (min. 12 gage) conforming in ASTM A167 and shall have a rectangular shape. The top of the dough trough shall have a rolled rim tightly closed and seal welded against the wall of the trough. The sides and bottom of the trough shall be formed of one sheet stainless steel. The ends shall be welded to the sides and bottom. Caster shoes shall be completely inclosed and be seal welded to the trough body.
Casters. The dough trough shall be equipped with four heavy duty sanitary type swivel casters bolted to caster shoes. The swivel assembly shall have all or roller bearings equipped with a pressure type lubricating fitting. The wheel bearings shall be ball or roller with pressure type lubricating fitting or lubricated and permanently sealed. Caster wheels shall be 4 inch diameter minimum fabricated from nonmarking material.
Dimensions. The minimum inside dough trough dimensions shall be 26 inches wide at the top, 21 inches deep, 4 feet long for size 4 and 6 feet long for size 6.
Standard compliance. The dough trough shall comply with Baking Industry Sanitation Standard No.2.
Identification plate. The dough trough shall be plainly and permanently marked with the contract number, national stock, number, manufacturer’s name, trade name, or trademark of such known character that the source of manufacture can be determined.
Certification. The contractor shall certify, and maintain substantiating evidence, that the product offered meets the salient characteristics and requirements of this Commercial Item Description, and that the product conforms to the producer’s own drawings, specifications, standards, and quality assurance practices and is the same product offered for sale in the commercial marketplace. The Government reserves the right to require proof of such conformance prior to first delivery and thereafter as may be otherwise provided for under the provisions of the contract.
