2.4 Handles. The handles shall be “U” shaped, not less than 5 inches in height and 2-1/2 inches in width and shall be fastened to each of the corner uprights between the fifth and sixth shelves as shown in figure 1, or the handles may consist of a rod connecting the two uprights along the 29 inch dimension on both ends.
2.5 Sanitation. Racks shall comply with the sanitation requirements of the Baking Industry Sanitation Standards Committee Standard No. 24.
2.6 Data name plate (Government unique requirement see 5.4). The rack shall be furnished with a data nameplate in accordance with the applicable requirements of MIL-STD-130, except the requirements for: (a) Methods of applying, (b) Identification tags, (c) Information not required, and (d) Optional marking information shall not apply. The data name plate shall be made of minimum 20-gauge corrosion-resisting metal and attached to the rack by rivets, screws, or welding in such a manner as to meet the applicable National Sanitation Foundation (NSF) sanitary requirements for this equipment. The plate shall bear photosensitive means:

Supplier’s Name, Address, and Telephone Number (List only if different from manufacturer)
Manufacturer’s Model Number
Government Approved Manual Number (see 5.2)
Each plate shall be placed so that it is readily visible to the operator during normal operating use and so as to not adversely affect the life and utility of the rack.
2.7 Assembly hardware. Each rack shall be furnished with nuts, bolts, washers, etc. of the type, size, and quantities required to assemble the rack.
2.8 Workmanship. The finished rack shall be complete, clean, and free of burns, scratches, breaks, sharp edges, sharp corners, and slivers. Rivets where used, shall be tight and properly peened and in full contact with the metal surfaces. Riveting shall be accomplished prior to galvanizing. Welding shall be continuous and sound, and free of slag, pits, buildup and undercuts. All flux shall be removed and welds shall be ground smooth. All welding shall be accomplished prior to galvanizing. The galvanized finish shall be clean, smooth, uniform, adherent and free of smudges, smears, runs, blisters, flakes, peeling, rust, and areas of no coverage.
