2. SALIENT CHARACTERISTICS
2.1 General. Dispensers shall maintain a load of dishes, bowls, trays, or racks, as applicable, at the proper dispensing level. The self-leveling mechanism shall operate smoothly without binding and shall be accessible for adjustment to compensate for various loads. The adjustment shall be accomplished without addition, removal, or replacement of springs.
2.2 Material, design and construction. The dispensers shall be fabricated from stainless steel designed to the configuration shown in figures 1 through 8. Figures 1 through 8 are for illustrative purposes only and are not intended to exclude dispensers otherwise meeting all applicable requirements of this document. The overall height of all mobile dispensers shall be 37 ± 3 inches, except that mobile dispensers, with silverware holders shall have an overall height 49 ± 3 inches. The dispensers shall be mounted on four 4 inch diameter (minimum) swivel casters, having a minimum load rating of 100 pounds each, two of which shall be equipped with brakes. Casters shall be removable. Dispensers shall be equipped with perimeter, corner, or round, bumpers located so as to contact vertical wall before any other portion of the dispenser and shall be removable in the event they become damaged and must be replaced.
S2.3 Detail requirements.
2.3.1 Type I – Heated dish dispenser. The type I shall be designated to operate on a 120 volt, 60 hertz, single-phase power supply, or on a 220 volt, 50 hertz, single-phase power supply, as specified (see 5.2). The dispenser shall be designed to thermostatically maintain a free air temperature of 160OF ± 20OF within the fully loaded dispenser. The dispenser shall have a power switch and power supply cord, and those designed for 120 volt, 60 hertz, single-phase power; except for style 4, size 9, shall be equipped with a National Electrical Manufacturers Association (NEMA) 5-15 plug at the end of the cord. Style 4, size 9 units shall be a standard 3-conductor type, a minimum of 5 foot long and grease and oil resistant. The dispensing mechanism shall be calibrated to dispense the number the types of bowls and plates specified below:
